Polygon/Path/Vert Collisions in Matter

Since my objects are a bit complex I can't just use arcade physics (?) since I want to use custom collider shapes.
So I guess I have to use matter (not sure if this really is my only option)

I already miss groups but here my real problem

I can flip this thing upside down I can not get a path that follows the outline, is there a tool or any logic behind this thing? So far I try to take the points via photoshop pixel location, it kind of works, but I never get the outline, it's like some offset is there to mess with my brain.

Showing the issue a bit better, now I just moved the bottom vert further down, nothing else. As you can see now the upper ones moved up.
