In simulation games, is it better to show players lots of statistics or keep the interface simple?

Health, happiness, knowledge, and savings can help players understand their virtual life. But too many numbers could make the experience feel more like managing a spreadsheet than playing a game.

I'm helping promote 1 in 8 Billion, a browser-based life simulator that displays these types of character statistics.

For anyone interested in game UI/UX: which stats should always remain visible, and which should appear only when players need them?
